HACCP Plan Review & Writing

A Hazard Analysis Critical Control Point (HACCP) plan is needed at the retail level if the establishment has certain specialized preparation methods.  Some examples include reduced oxygen packaging, curing food, or smoking food to preserve it, among others.  However, even if a HACCP plan is not required, the FDA endorses the voluntary implementation of food safety management systems in retail and food service establishments. Combined with well-defined SOPs, a solid employee training program, and other prerequisite programs (see Food Safety Plan above), HACCP can provide you and your employees a complete food safety management system.
